Black bean salad on a cornbread waffle

It may seem strange at first to have a savory waffle but this is made from cornbread, and it’s very good and a lot more healthy! The bean salad is black beans with pico de gallo then I top that with sliced avocados, mangos, heirloom tomatoes, red onions, cotija cheese, and lime juice.

Cast Iron Cornbread Vegetarian Chili

This cast iron cornbread chili begins by making cornbread in the skillet. Then, I use an ice cream scoop o remove the cornbread from he center and then I set it aside. I make the chili with one sweet onion a cup of pico de gallo, one can of chili beans, and one can of pinto beans with crushed tomato and chili powder. I sprinkle some of the remaining cornbread, cotija cheese, cilantro, and lime juice. I usually add slices of avocado on the top, but I couldn’t find any today. This is high fiber, low calorie, high protein, and very good!

Santa Fe Bean and Rice enchilada

Less fat then your typical cheesy enchilada and tastes a lot better! Two flour/corn tortillas, organic brown rice, pinto beans, pico de gallo, enchilada sauce, mexican cheese, topped with homemade guacomole, salsa rojo, and cotija cheese.
