Starting with whole wheat naan bread, I spread on organic hummus. Then, I topped it with butter leaf lettuce, micro greens, mangos, olives, heirloom tomatoes, english peas, feta, and pomegranate seeds. Delish!

Cast Iron Cornbread Vegetarian Chili
This cast iron cornbread chili begins by making cornbread in the skillet. Then, I use an ice cream scoop o remove the cornbread from he center and then I set it aside. I make the chili with one sweet onion a cup of pico de gallo, one can of chili beans, and one can of pinto beans with crushed tomato and chili powder. I sprinkle some of the remaining cornbread, cotija cheese, cilantro, and lime juice. I usually add slices of avocado on the top, but I couldn’t find any today. This is high fiber, low calorie, high protein, and very good!
